I've found that, next to a meerschaum pipe, that corn cobs tend to deliver a "truer" taste of the tobacco. It does tend to add a little sweetness to it, but every cob I've used has been a VERY pleasant smoke.
There is a reason that I also use them for my "yard pipes" for when I'm doing yard work.
Have you found the "ultimate benefit" of corn cobs when compared to the high dollar briars that tend to burn out in a somewhat equal time period of use? Granted.. briar gives you some "body" to the tobacco.. but if you want to enjoy the tobacco itself, there are better choices (corn cob and meerschaum being the prime ones with clay following along).
